DRY WIT
(Urban Dictionary definition: The ability to criticise people and have them laugh about it)

1 Cooper's Wheat Beer Kit
1 lb Light Dry Malt
500 gms Honey
200 gms Corn Syrup
20 gms crushed corriander
10 gms szechuan pepper
6 Kafir Lime leaves, finely chopped
Grated zest from 1 Kafir lime
1 oz Saaz
Kit yeast
Made up to 20 litres

Boiled everything except the honey and kit for 45 mins.
Removed from fire and added the honey and kit.
Fermented at 18*C-20*C
7 days in Primary before TAD-ing/Bottling
Alc about 5.5% after priming.
After 2 weeks in the TAD, the beer is very dry with slight haze and a good head, no hint whatsoever of the pepper, the corriander is there only if you go looking for it, and the Kafir Lime just about makes its presence felt. And, after everybody has had about two glasses, it sure lives up to the definition in the Urban Dictionary.
Going to be one of my staples, perhaps upping the amount of pepper, coriander and Kafir Lime
I prefer a bottle in front of me to a frontal lobotomy.

Hi avp
The Beer sounds good, what yeast did U use, the one supplied I'm guessing.
U'r comments re the next batch with upping some of the ingredients.

What I'd do is try a liquid yeast pack as experiement and use everything exactly the same amounts, taste if there are changes to the aroma, taste etc as U were expecting. U may well get a suprise I'm picking.
Those liquid yeast are really out there as far as doing what they are selected for. I love them LOL..

If not then try the additions first, and of course keep those few tasters for US !!!! :wink:

Yep, the yeast came with the kit.

and of course keep those few tasters for US !!!!

Sorry about tasters tho, Spud,this one was cleaned out during one BBQ sometime in May!
Have not been brewing that much lately. :(
